Whole Wheat Pasta
Ingredients
- 2 ¾ cups whole wheat flour (¼ cup of the flour is used in forming pasta)
- 2 whole eggs
- 2 egg whites
- 4 ½ tsp olive oil
- 2 tsp salt
- 2-3 tbsp water
Preparation
- Put 2 ½ cups flour, eggs, egg whites, salt and oil in food processor and mix until well blended. Add water gradually as food processor is on and continue to process until dough bunches up in one mass. OR: put 2 ½ cups flour on counter and make a hold in the middle of the flour. Pour in the beaten eggs and egg whites, oil and salt, and water. Work flour and liquid together until you have formed a good stiff dough. Knead till smooth.
- Shape dough into a ball, cover with a towel and let rest a few minutes. Proceed as shown for noodles or spaghetti.
- Put pasta on cookie sheets in 200º oven for drying. Takes about 1 hour.
- Store in plastic bag or jar. May be cooked without drying. Dry pasta may be frozen to keep it fresh tasting.
Makes about 1 pound dry pasta. This makes 16 servings at 95 calories each.
