Orange Tofu

Ingredients:

 

  • 2 medium ripe avocados, pitted and diced
  • Juice from ½ lime
  • Salt and pepper to taste
  • 4 slices bread, toasted
  • 1 medium tomato, thinly sliced
  • 1 sweet pepper, thinly sliced
  • Cooking spray for pan
  • 4 large eggs
  • 2 tablespoons fresh parsley, minced

Preparation

  1. Start by making the fried eggs. Lightly coat a medium skillet with cooking spray and set it over medium-high heat. Crack two eggs into the pan, season with salt and pepper, and let them cook undisturbed until the whites are fully set. Gently lift them out with a spatula and transfer to a plate. Repeat the process with the remaining two eggs.
  2. Next, in a separate bowl place the diced avocado. Add the lime juice and mash until smooth. Season with salt and pepper to taste. Spread the mashed avocado evenly over slices of toast, then layer with tomato and pepper slices.
  3. Carefully arrange a fried egg on top of each toast. Sprinkle minced parsley over top.
