Orange Marmalade Chicken Breast

Ingredients
- 6 chicken breasts
- 1⁄2 cup Matador Marmalade
- 1 tsp ginger, fresh
- 1⁄2 cup rice wine vinegar
- 1⁄4 tsp sesame oil
- 1 tbsp low-sodium soy sauce
- 2 garlic cloves, minced
- 1 large orange, peeled and sectioned
- 1⁄2 cup fresh pineapple
Serves 12
Directions
- Preheat the oven to 350° F. In a baking dish, arrange the chicken breasts so they are not overcrowded.
- In a bowl, combine the marmalade, ginger, vinegar, oil, soy sauce and garlic. Pour this marinade over the chicken and bake for 40 minutes.
- In a separate bowl, combine the orange and pineapple. Remove the chicken from the oven and top with the fruit mixture. Place back into the oven for an additional 20 minutes. Optional: May serve on a bed of brown rice.
