Quick Orange Beef Stir Fry

Ingredients

  • 2 tablespoons olive oil
  • 1/2 pound boneless beef sirloin, cut into thin strips
  • 1 (12-ounce) bag frozen, lightly seasoned Asian vegetable medley, thawed
  • 1 tablespoon sesame seeds
  • 2 teaspoon minced garlic
  • 1/3 cup Matador Marmalade
  • 1/3 cup water
  • 2 tablespoons low-sodium soy sauce

Serves 2

Directions

1. Coat large skillet with olive oil and heat over medium high heat.

2. Stir-fry beef 2-3 minutes or until no longer pink, and remove from pan with slotted spoon. Keep warm.

3. Add vegetables and garlic to skillet. Stir-fry over medium heat for 2 minutes.

4. Add marmalade, water and soy sauce and cook for 3-4 minutes, stirring occasionally until sauce slightly thickens.

5. Add the beef back into the pan. Cook until heated through. Top with the sesame seeds and serve immediately.

Optional: May also serve over brown rice.
