Kale, Orange & Almond Salad with Marmalade Dressing

Preparation

In a jar, add

  • ¼ cup of extra virgin olive oil
  • ¼ cup apple cider vinegar
  • 1 tsp of minced fresh ginger
  • 1 clove garlic
  • 2 tbsp of Matador Marmalade
  • A pinch of salt and pepper each
  • Close the jar and shake to mix ingredients

After shaking, add

  • 1 finely chopped green onion
  • Shake again

In a bowl, add in

  • 1 bunch, de-stem and rinse kale
  • Add the dressing mixture
  • 1 peel and cube fresh orange
  • ½ cup, chopped roasted almonds
