Kale, Orange & Almond Salad with Marmalade Dressing
Preparation
In a jar, add
- ¼ cup of extra virgin olive oil
- ¼ cup apple cider vinegar
- 1 tsp of minced fresh ginger
- 1 clove garlic
- 2 tbsp of Matador Marmalade
- A pinch of salt and pepper each
- Close the jar and shake to mix ingredients
After shaking, add
- 1 finely chopped green onion
- Shake again
In a bowl, add in
- 1 bunch, de-stem and rinse kale
- Add the dressing mixture
- 1 peel and cube fresh orange
- ½ cup, chopped roasted almonds
