Carrot & Ginger Salad

Ingredients

  • 1 tbsp fresh orange juice 
  • ½ tbsp Matador Marmalade 
  • 1 tsp fresh ginger, grated or finely minced 
  • ⅛ tsp cinnamon 
  • A dash of salt 
  • 2 cups carrots, grated 
  • ¼ cup dried cranberries 
  • 2 tbsp almonds, sliced

Serves 4

Directions

  1. In a medium bowl, whisk together orange juice, marmalade, ginger, cinnamon and salt.
  2. Toss with carrots and cranberries. Garnish with sliced almonds.
