Apple & Orange Marmalade Salad

Ingredients

  • 3 tbsp Matador Marmalade 
  • A splash of almond extract 
  • A pinch of kosher salt 
  • 2 tsp water 
  • 1 medium red apple 
  • 1 medium green apple 
  • 1 tbsp dried cranberries, roughly chopped 
  • 3 tbsp sliced almonds 
  • 1 small shortbread cookie, lightly crushed

Serves 4

Preparation

  1. Whisk together the marmalade, almond extract, salt and water in a medium bowl. Set aside.
  2. Set the apples on a cutting board. Cut the flesh away from the cores, making 4 apple “cheeks” from each apple. Discard the cores. Cut the flesh into very thin slices and add it to the bowl with marmalade. Toss to coat.
  3. Divide the apples among 4 small plates and sprinkle each serving with cranberries, almonds and crushed cookies.
