Grilled Salmon Salad
Directions
- 1 (6-ounce) salmon fillet
- ½ tsp of salt
- ½ cup of olive oil
- Grill salmon 5-10 minutes on each side
In a bowl, add
- ½ pound of Baby Salad Greens
- 1 cup sliced in half Kalamata olives
- 2 peeled and segmented oranges
- 1 thinly sliced red onion
- ½ tsp of orange peel
- 1 tbsp finely chopped shallots
- 1 tsp light brown sugar
- 1 cup canola oil
- ½ tbsp extra virgin olive oil
- 1 tbsp seasoned rice vinegar
Mix and add
- 20 grilled spears of asparagus
- Grilled salmon
- A pinch of white pepper
