Grilled Salmon Salad

Directions

  • 1 (6-ounce) salmon fillet
  • ½ tsp of salt
  • ½ cup of olive oil
  • Grill salmon 5-10 minutes on each side

In a bowl, add

  • ½ pound of Baby Salad Greens
  • 1 cup sliced in half Kalamata olives
  • 2 peeled and segmented oranges
  • 1 thinly sliced red onion
  • ½ tsp of orange peel
  • 1 tbsp finely chopped shallots
  • 1 tsp light brown sugar
  • 1 cup canola oil
  • ½ tbsp extra virgin olive oil
  • 1 tbsp seasoned rice vinegar

Mix and add

  • 20 grilled spears of asparagus
  • Grilled salmon
  • A pinch of white pepper
