Chinese Chicken Salad
Ingredients
- 6 Ounce Shredded Chicken
- 1/3 Bunch cilantro chopped-
- 1/3 Bunch watercress chopped
- ½ head lettuce shredded
- 2 stalks celery sliced thin
- 1 cup bean sprout-
- 2 Tablespoons rice wine vinegar
- 2 Tablespoons lemon juice-
- 1 Tablespoon plus 1 teaspoon soy sauce
- 1 Teaspoon fresh grated ginger
- ¼ cup homemade chicken stock (with gelatin preferable)-
- 2 teaspoon sesame oil-
- 2 Teaspoons salad oil (not olive oil)
- 6-8 drops tabasco sauce
- 2 Teaspoon dry mustard
- 2 Tablespoons toasted sesame seeds
Directions
- In a medium sized bowl, combine the vinegar, lemon juice, soy sauce, ginger, chicken stock, sesame oil, salad oil,
- tabasco sauce and dry mustard. Add in the shredded chicken and allow to marinate for at least one hour.
- While the chicken is marinating prepare the remaining ingredients and allow them to chill.
- When ready to serve, toss the chicken and marinade with the chilled vegetables until well blended.
- Serve on salad plates or a large platter and garnish with toasted sesame seeds.
