Chinese Chicken Salad

Ingredients

  • 6 Ounce Shredded Chicken
  • 1/3 Bunch cilantro chopped-
  • 1/3 Bunch watercress chopped
  • ½ head lettuce shredded
  • 2 stalks celery sliced thin
  • 1 cup bean sprout-
  • 2 Tablespoons rice wine vinegar
  • 2 Tablespoons lemon juice-
  • 1 Tablespoon plus 1 teaspoon soy sauce
  • 1 Teaspoon fresh grated ginger
  • ¼ cup homemade chicken stock (with gelatin preferable)-
  • 2 teaspoon sesame oil-
  • 2 Teaspoons salad oil (not olive oil)
  • 6-8 drops tabasco sauce
  • 2 Teaspoon dry mustard
  • 2 Tablespoons toasted sesame seeds
     

Directions

  1. In a medium sized bowl, combine the vinegar, lemon juice, soy sauce, ginger, chicken stock, sesame oil, salad oil,
  2. tabasco sauce and dry mustard. Add in the shredded chicken and allow to marinate for at least one hour.
  3. While the chicken is marinating prepare the remaining ingredients and allow them to chill.
  4. When ready to serve, toss the chicken and marinade with the chilled vegetables until well blended.
  5. Serve on salad plates or a large platter and garnish with toasted sesame seeds.
