Quinoa Stuffed Tomatoes

Ingredients

  • 1 Cup Quinoa
  • 1 Diced Carrot
  • 2 Diced Celery
  • 7 Mushrooms
  • 7 Garlic Cloves
  • 3 Roma Tomatoes
  • 1 Cup Diced Onion
  • Feta Cheese

Directions:

  1. Boil and cook Quinoa
  2. Dice and chop carrots, celery, mushrooms, garlic, and onion
  3. Cut roma tomatoes in half and scoop out insides
  4. In a hot pan, cook the diced ingredients alongside the Quinoa
  5. Scoop this cooked mixture into the roma tomato shells and add feta cheese on top
