Quinoa Stuffed Tomatoes

Ingredients

  • 1 cup quinoa
  • 1 diced carrot
  • 2 diced celery
  • 7 mushrooms
  • 7 garlic cloves
  • 3 Roma tomatoes
  • 1 cup diced onion
  • Feta cheese

Preparation

  1. Boil and cook quinoa
  2. Dice and chop carrots, celery, mushrooms, garlic, and onion
  3. Cut Roma tomatoes in half and scoop out insides
  4. In a hot pan, cook the diced ingredients alongside the Quinoa
  5. Scoop this cooked mixture into the roma tomato shells and add feta cheese on top
