Quinoa Stuffed Tomatoes
Ingredients
- 1 cup quinoa
- 1 diced carrot
- 2 diced celery
- 7 mushrooms
- 7 garlic cloves
- 3 Roma tomatoes
- 1 cup diced onion
- Feta cheese
Preparation
- Boil and cook quinoa
- Dice and chop carrots, celery, mushrooms, garlic, and onion
- Cut Roma tomatoes in half and scoop out insides
- In a hot pan, cook the diced ingredients alongside the Quinoa
- Scoop this cooked mixture into the roma tomato shells and add feta cheese on top
