Quinoa Stuffed Tomatoes
Ingredients
- 1 Cup Quinoa
- 1 Diced Carrot
- 2 Diced Celery
- 7 Mushrooms
- 7 Garlic Cloves
- 3 Roma Tomatoes
- 1 Cup Diced Onion
- Feta Cheese
Directions:
- Boil and cook Quinoa
- Dice and chop carrots, celery, mushrooms, garlic, and onion
- Cut roma tomatoes in half and scoop out insides
- In a hot pan, cook the diced ingredients alongside the Quinoa
- Scoop this cooked mixture into the roma tomato shells and add feta cheese on top
