Chayote with Corn & Chiles
This tasty dish is an excellent side dish to any meal. Chayote is a pear-shaped, light green vegetable that belongs to the gourd family which includes melons, cucumbers, and squash. It has a crunchy texture and a mild, sweet flavor.
Ingredients
- ½ cup chopped onion
- 1 tablespoon olive oil
- 2 chayotes, peeled, seeded, and cubed
- 2 fresh chilies, seeded and diced
- 1½ cup fresh or frozen corn kernels
- salt and pepper to taste
- ½ cup evaporated milk
- ¼ cup grated Parmesan cheese
- ¼ cup grated sharp cheddar cheese
Preparation
- Sauté onion in olive oil in a saucepan.
- Add chayotes, diced chilies, corn, salt, pepper, and milk to the saucepan.
- Cover and cook gently for about 15 minutes, or until the chayotes are tender.
- Stir in the Parmesan and cook a few seconds until the sauce thickens.
- Transfer to a serving bowl and sprinkle with cheddar cheese.

- 1 cucharada de aceite de oliva
- 2 chayotes pelados, sin semillas y cortados en cubitos
- 2 chiles frescos, sin semillas y picados
- 1½ tazas de granos de elote frescos o congelados
- sal y pimienta al gusto
- ½ taza de leche evaporada
- ¼ taza de queso parmesano rallado
- ¼ taza de queso cheddar fuerte rallado
Preparación
- Saltee la cebolla en aceite de oliva en una cacerola.
- Agregue los chayotes, los chiles picados, el elote, la sal, la pimienta y la leche a la cacerola.
- Cubra y cocine a fuego lento durante 15 minutos, o hasta que los chayotes estén tiernos.
- Agregue el parmesano mientras revuelve y cocine durante algunos segundos hasta que la salsa se haga espesa.
- Pase el platillo a un tazón para servir y espolvoree el queso cheddar.
