Zucchini Soup
Ingredients
- 2 tsp butter
- 4 oz chopped onion
- 1 ½ lb sliced zucchini
- 1 ⅔ cup chicken broth
- 2-3 scrapings of fresh nutmeg (optional)
- 1 tsp dried basil leaves
- ½ tsp salt
- ⅛ tsp pepper
- ¾ cup evaporated skim milk
- ¼ cup buttermilk
Preparation
- In a medium saucepan, melt butter over medium heat. Add the chopped onion and zucchini and sauté until soft.
- Add the dried basil, nutmeg (if using), salt, and pepper.
- With a hand blender, blend until you reach your desired consistency.
- Lower the heat and the milk and buttermilk. Heat through.

- ½ cucharadita de sal
- ⅛ cucharadita de pimienta
- ¾ taza de leche desnatada evaporada
- ¼ taza de suero de leche
