Zucchini Soup

Ingredients

  • 2 tsp butter
  • 4 oz chopped onion
  • 1 ½ lb sliced zucchini
  • 1 ⅔ cup chicken broth
  • 2-3 scrapings of fresh nutmeg (optional)
  • 1 tsp dried basil leaves
  • ½ tsp salt
  • ⅛ tsp pepper
  • ¾ cup evaporated skim milk
  • ¼ cup buttermilk

Preparation

  1. In a medium saucepan, melt butter over medium heat. Add the chopped onion and zucchini and sauté until soft.
  2. Add the dried basil, nutmeg (if using), salt, and pepper.
  3. With a hand blender, blend until you reach your desired consistency.
  4. Lower the heat and the milk and buttermilk. Heat through.

  • 1 ½ libra de calabacín en rodajas
  • 1 ⅔ taza de caldo de pollo
  • 2-3 raspaduras de nuez moscada fresca (opcional) 
  • 1 cucharadita de hojas secas de albahaca
  • ½ cucharadita de sal
  • ⅛ cucharadita de pimienta
  • ¾ taza de leche desnatada evaporada
  • ¼ taza de suero de leche
