Hearty Minestrone Soup
Ingredients
- 1 tablespoon olive oil
- 1 yellow onion, chopped
- 2-3 carrots, chopped
- 2-3 celery stalks, chopped
- 3 cloves garlic, minced
- 1 (28 ounce) can diced tomatoes
- vegetable bouillon
- 1-2 Yukon potato, chopped
- 1 cup chopped green beans
- 1 (15 ounce) can white cannellini beans
- 1-2 zucchini, chopped
- 1 head cabbage, chopped
- 4 cups baby kale
Preparation
- In a large pot, heat oil over medium heat. Add chopped onions, carrots, and celery, Sauté until soft.
- Add the remaining ingredients and simmer on low heat for one hour.
