Ingredients

  • 2 tbsp of extra virgin olive oil
  • 3 cloves of minced garlic
  • 1 cup of chopped onion
  • 1 lb of peeled and chopped carrots
  • 1 tsp of ginger
  • 1 tsp of dried thyme leaves
  • 1 tsp of salt
  • 1 tsp of black pepper
  • 6 cups of low sodium chicken broth

Directions

  1. Cook until carrots are fork-tender
