Red Beet Chocolate Cupcakes
Ingredients
- 3⁄4 cup flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon baking powder
- 1 cup sugar
- 3⁄4 cup corn oil
- ½ teaspoon cinnamon
- 2 eggs
- ½ teaspoon vanilla extract
- 1 cup pureed, cooked beets
- 2 ½ ounces unsweetened chocolate, melted
- Powdered sugar
Preparation
- In a medium bowl, sift together the flour, baking soda, salt, and baking powder.
- In a separate bowl, mix together the sugar, oil, cinnamon, and eggs. Add the vanilla extract and pureed beets. Stir thoroughly to combine.
- Add melted chocolate and stir.
- Add the wet batter to the flour mixture and mix until combined.
- Add batter to paper-lined muffin tins.
- Bake at 350°F for 25-30 minutes.
- Dust the tops with powered sugar if desired.
