Red Beet Chocolate Cupcakes

Ingredients

  • 3⁄4 cup flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • 1 cup sugar
  • 3⁄4 cup corn oil
  • ½ teaspoon cinnamon
  • 2 eggs
  • ½ teaspoon vanilla extract
  • 1 cup pureed, cooked beets
  • 2 ½ ounces unsweetened chocolate, melted
  • Powdered sugar

Preparation

  1. In a medium bowl, sift together the flour, baking soda, salt, and baking powder.
  2. In a separate bowl, mix together the sugar, oil, cinnamon, and eggs. Add the vanilla extract and pureed beets. Stir thoroughly to combine.
  3. Add melted chocolate and stir.
  4. Add the wet batter to the flour mixture and mix until combined.
  5. Add batter to paper-lined muffin tins.
  6. Bake at 350°F for 25-30 minutes.
  7. Dust the tops with powered sugar if desired.
