Orange Marmalade Cake

Ingredients

  • 1 1⁄2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1⁄4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1⁄2 teaspoon ground nutmeg
  • 1⁄2 teaspoon cloves, ground
  • 2⁄3 cup butter, melted
  • 3 medium eggs
  • 1⁄3 cup 1% milk
  • 1 tablespoon lemon juice
  • 1⁄2 cup walnuts, chopped
  • 1⁄2 cup pecans, chopped
  • 1⁄2 cup Matador Marmalade

Glaze

  • 1 tablespoon orange juice
  • 3⁄4 cup confectioners sugar

Serves 12

Directions

  1. Preheat oven to 350° F. Grease and flour a 9-inch Bundt pan.
  2. Sift together the flour, baking powder, salt, cinnamon, nutmeg and cloves. Set aside
  3. In a medium bowl, stir together the butter, eggs, milk and lemon juice. Add the bowl of flour and other dry ingredients to the egg mixture and mix until well blended
  4. Stir in the walnuts, pecans and marmalade
  5. Pour batter into the prepared cake pan
  6. Bake for 45-60 minutes, until cake springs back when lightly touched
  7. Cool for 10 minutes in the pan before inverting onto a wire rack to cool completely
  8. To make the glaze: In a separate bowl, combine the orange juice and confectioners sugar until well blended. Pour over the cooled cake and allow to set.
