Chilled Artichoke

Ingredients:

  • 1 artichoke head
  • ¼ cup lemon juice
  • 2 tablespoons of mayonnaise
  • ¼ cup low-fat plain yogurt
  • ¼ cup sour cream
  • 1 teaspoon dijon mustard
  • ½ teaspoon dill weed
  • Salt

Preparation:

  1. Prepare artichoke
  2. Dip artichoke in lemon juice
  3. Steam for 45 minutes or microwave for 12 minutes
  4. In a bowl, whisk together mayonnaise, low-fat plain yogurt, sour cream, ijon
  5. Mustard, salt and dill weed
  6. Garnish sauce with dill weed
  7. Serve and enjoy
