1 Cup skim milk and 1/3 Cup dry milk solids (or 1 cup evaporated skim milk)
Preparation:
Melt butter in saucepan or microwave. Add flour and stir to blend well.
Add lemon juice to milk and stir constantly on medium heat until well blended and bubbling. Use wire whip to evenly distribute butter-flour mixture.
Add salt and white pepper.
Serve immediately or cover with plastic wrap directly on surface of sauce and cool for later use. When ready to serve, remove wrap and heat till warm on a low flame; or heat in glass pitcher in microwave on ½ power or defrost till; warm enough to serve, about 3 minutes
