White Sauce
Ingredients
- 1 tablespoon flour
- 1 tablespoon butter or margarine
- ½ teaspoon salt
- ⅛ teaspoon white pepper
- 1 Teaspoon lemon juice
- 1 cup skim milk and ⅓ cup dry milk solids (or 1 cup evaporated skim milk)
Preparation
- Melt butter in saucepan or microwave. Add flour and stir to blend well.
- Add lemon juice to milk and stir constantly on medium heat until well blended and bubbling. Use wire whip to evenly distribute butter-flour mixture.
- Add salt and white pepper.
- Serve immediately or cover with plastic wrap directly on surface of sauce and cool for later use. When ready to serve, remove wrap and heat till warm on a low flame; or heat in glass pitcher in microwave on ½ power or defrost till; warm enough to serve, about 3 minutes.
