Lowfat Mayonnaise

Ingredients:

  • 2 egg yolks
  • 2 teaspoons Dijon mustard
  • 1 tablespoon lemon juice
  • ⅓ cup olive oil
  • ⅛ teaspoon white pepper
  • 1 ½ teaspoon salt
  • ⅔ cup vegetable oil
     

Directions:

  1. Blend together egg yolks, Dijon mustard, lemon juice, olive oil, white pepper, and teaspoon salt
  2. Slowly incorporate vegetable oil into mixture
  3. Serve and enjoy
