Whole Wheat Pancakes
Ingredients
- ½ cup unbleached all-purpose flour
- ½ cup whole wheat flour
- 1 ½ teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 tablespoons brown sugar
- 2 ½ cups reduced fat buttermilk
- ⅓ cooking oil or melted unsalted butter
- 2 eggs
- 1 teaspoon vanilla extract
Optional toppings or flavorings
Blueberries, sliced strawberries, sliced bananas, chopped nuts, chocolate chips, mini
marshmallows, caramel chips, flax seeds, dried fruits (raisins, currants, cranberries etc.)
Maple syrup or fresh fruit purees such as applesauce or pear sauce.
Preparation
- In a bowl combine the 2 flours, baking powder, baking soda, salt, the eggs, vanilla, and sugar. Mix gently while slowly pouring the buttermilk, Continue to mix until smooth, about 1 minute.
- Heat a griddle or greased (butter or cooking oil) frying pan over medium high heat. Pour ¼ cup of the batter per pancake, into the pan. Once bubbles form on top of the pancakes, flip over and cook on the other side for about 2 minutes. (If you want to add other ingredients, such as berries, nuts, diced fruits, chocolate chips, add once you see the bubbles forming.)
- Serve with your favorite topping and fresh berries and fruits in season.
