Grilled Salmon Salad

Directions:

  • 1 (6-ounce) Salmon Fillet
  • ½ TSP of Salt
  • ½ CUP of Olive Oil
  • Grill Salmon 5-10 minutes on each side

In a bowl, add

  • ½ POUND of Baby Salad Greens
  • 1 CUP Sliced in Half Kalamata Olives
  • 2, Peeled and Segmented Oranges
  • 1, Thinly sliced Red Onion
  • ½ TSP of Orange Peel
  • 1 TBSP, Finely Chopped Shallots
  • 1 TSP Light Brown Sugar
  • 1 CUP Canola Oil
  • ½ TBSP, Extra Virgin Olive Oil
  • 1 TBSP, Seasoned Rice Vinegar
  • Mix and add
  • 20 Grilled Spears of Asparagus
  • Grilled Salmon
  • A pinch of White Pepper
